When Abuelita Chela migrated to Florida, she carried her homeland in her heart and her heritage in her hands. She brought more than cooking skills—she brought the warmth of Nicaraguan hospitality, the pride of her culture, and a deep desire to share the authentic flavors of home with her new community. In Florida, she continued the traditions her mother taught her, cooking for family gatherings and friends who quickly became family.
Today, you'll find Abuelita Chela in our kitchen, still preparing every dish with the same love and techniques her mother passed down to her in Nicaragua. Her children now work alongside her at Chelas, learning the same traditions and helping welcome our community with the pride and warmth she taught us.
We stay true to Abuelita's methods—from sourcing authentic Nicaraguan ingredients to preparing each dish by hand, just as she does. Our gallo pinto simmers slowly, our carne asada is grilled over open flame, and our quesillos are made fresh daily. These aren't shortcuts—they're traditions worth preserving.
